Bacon and Chive Deviled Eggs made with Baba Black Lager Mustard

Ingredients:

12 eggs, hard boiled

½ cup mayo

¼ tsp salt

2 tbsp Baba Black Lager Mustard

½ tsp sugar

½ tbsp. bacon grease

4 strips of bacon

1 tbsp fresh chives

Paprika

 

Directions:

After much experimentation, this is how I boil my eggs: 7-8 minutes with the stove on in the boiling water, then 7-8 minutes sitting in the hot water, covered, with the stove off. Then, they are dunked into a bowl of ice water until completely cooled. Mine were just slightly under hard boiled for this recipe and it worked out exactly how I wanted.

While the eggs are boiling, cook the bacon.

When finished, Slice the eggs in half and remove the yolks.

Whip the yolks together with mayo, salt, mustard, sugar, and bacon grease.

Once those ingredients are well combined and the yolks are looking fluffy, stir in the chives.

Create a makeshift piping bag out of a Ziploc plastic bag by stuffing it  (I use a cup to help stand up the bag) and cutting off the corner. Pipe the filling into the eggs and then top with a tiny piece of bacon and some paprika.
