Pancetta Mint Sandwich

This is a short and sweet post on one of my favorite sandwiches. I used to make this a lot so I thought I should feature it. This sandy is perfectly light and healthy but also incredibly easy to make in a short amount of time. The combination of pancetta and mint is surprising and delicious. With all these decadent ingredients, you’ll feel extra fancy. Serve with a vinaigrette and Tank 7 by Boulevard Brewing Co.


2 pieces of whole grain toast

4 slices of pancetta

2 slices of mozzarella

2 slices of heirloom tomato

A handful of spinach

5-10 mint leaves

Olive oil mayo

Vinaigrette: whisk together 3 tbsp of olive oil, 2 tbsp balsamic, 1 tsp of dijon mustard


Stack ’em up!

Spinach and ONE LAYER of mint leaves. You don’t want them to be overpowering.


Pile on those gorgeous heirloom tomatoes. God’s gift to those who love cooking and/or eating.

Serve this guy with the vinaigrette for dipping and a delicious bottle of Tank 7



Beer Pairing: Tank 7 Farmhouse Ale by Boulevard Brewing Co. 

I’m obligated to love this beer because it hails from my home state of Missouri (therefore any friends from home reading this should easily be able to snag a bottle). Clearly, I have an obsession with Farmhouse Ales. Tank 7 is up there with the best of them. Here’s the taste: first lemon and grapefruit, possibly other citrus… then yeast and earthy funkiness. Light, flavorful, and slightly bitter near the end. Yum yum yum yum. How can it be so good? Probably because its from Missouri.
