Favorite Parts of Collaboration Fest 2014:
Success. Its the best word to describe Collaboration Fest 2014. I have been to other beer festivals before, but this was by far one of my favorite. Not only did I get the chance to try over 35 new brews, there was enough for everyone! I’ve seen problems at festivals in the past where breweries come unprepared and run out before the festival is over. Not at Collaboration Fest. I stayed until the very end and the party was still poppin’.

Last week I went over to cook with my newly married friends, the Belsky family. I love cooking with friends, especially when we are making separate parts of the meal. This way, we don’t have to end up in a fist-fight over who has the best technique or which recipe is better (can you tell I am super competitive). Kaitlin stuck to what she knew, the carbonara, and I worked on with the pasta. Kaitlin and Peter also got a little lesson on how to make pasta from scratch! It was great having Peter around because we used him to finish kneading the pasta. I like making pasta but my weak little girl muscles just can’t handle the burn, which is why its great to have big, strong men around to help out in the kitchen.

The title of this recipe has a double meaning. First, it means that Granny J is hot stuff. Second, this is Granny J’s hot stuff – the best pepper jelly in the world. She finally revealed her secrets and sent me the recipe for this prized family jewel. And it’s awesome. Every bite reminds me of my childhood, eating cream cheese and pepper jelly with crackers on my deck in the summer time. It’s sweet and hot and the most amazing snack in the world.

I know stout cupcakes have been done before but probably never under these circumstances or with this beer (Aphrodite by Dieu du Ciel). When Abby, Meghan, and I went to the New Belgium Snapshot Wheat release party, we showed up without tickets and they still somehow let us in. Out of sheer excitement, I threw my arms in the air with my hands clenched in fists, somewhat of a double fist pump move. On the way up, my friend Meghan got in the way of my arm maneuver and BOOM! …. punched her right in the face. So to make up for my accidental wrongdoing, I made her some cupcakes hoping the magical powers of the stout would help her feel better. These cupcakes aren’t any ordinary stout cakes. They are chocolate and vanilla stout cupcakes topped with peanut butter frosting, chocolate ganache, and pretzels. They probably didn’t heal her, but at least she got a tasty snack. Meghan, next time I suggest watching where you put your face so it wont get in the way of my fists.

What came first…the chicken or the egg? Who cares when you can have them both? This sandwich has panko pan fried chicken, roasted red pepper, a fried egg, arugula, pesto, and Parmesan encrusted bread. That’s right…the cheese is on the OUTSIDE of the bread. Maybe I’ve been going a little sandwich crazy lately, but how could I not when things this delicious can be made? The chicken is spicy and crispy, the red pepper and pesto are sweet, and the ooey-gooey egg yolk brings it all together. Did I mention there is CHEESE on the OUTSIDE of the bread? Yeah, its that good. To make this a balanced meal, you’re going to need a beer. For this one I chose Redacted, a Rye India Pale Ale by Renegade Brewing Company.

This is a short and sweet post on one of my favorite sandwiches. I used to make this a lot so I thought I should feature it. This sandy is perfectly light and healthy but also incredibly easy to make in a short amount of time. The combination of pancetta and mint is surprising and delicious. With all these decadent ingredients, you’ll feel extra fancy. Serve with a vinaigrette and Tank 7 by Boulevard Brewing Co.
