Jalap-ocado Lobster Roll

So I guess this isn’t the most well written recipe I’ve ever done, mainly because it’s not very precise. I will tell you that if you figure out the right combination of ingredients, it tastes fantastic. I decided to have a ‘treat yo self’ day and make a lobster roll for one. The store was having a sale on lobster and I figured, what the hell, why not? And then this creation was born – Jalap-ocado Lobster Roll (jalapeño avocado lobster roll.) Go ahead and double, triple, or even quadruple the recipe if you have some friends that want to celebrate ‘treat yo self’ day with you. Apparently I have no friends. But at least I didn’t have to share my beer.

Cinco de Mayo – Part 2 of 3

Gordon’s Chipotle Guacamole 

HAPPY CINCO DE MAYO! My dad, Gordon, has been begging me to post his guacamole recipe since the blog began. I think he wants to be famous and the time has finally come for him to have the spotlight. This dish is basically his go-to party favor. I think the first time he brought it out was for Thanksgiving. Guacamole…at Thanksgiving. Whatever – its amazing and I’d eat it year round too. It’s a bit different than your average guac since it has chipotle peppers. He adds lemons to his as well but I forgot to buy them so mine won’t. Feel free to mix it up and enjoy!

Summer Sandy with a Saison Vinaigrette

Need a little taste of Summer? Try out this mango-tomato-avocado-smoked salmon sandwich with a saison vinaigrette. To shorten this up a bit, we will just call it the Summer Sandy. It is all kinds of tropical and has that really good sweet and salty thing going on from the salmon and the fruits. Not only is the Summer Sandy light and tasty, its also packed with protein, whole grains, and fiber. You’ll feel like you can conquer the world after eating this creation. Bon appetit!

“I call sandwiches sammies, sandoozles, or Adam Sandlers” – Tom Haverford, Parks and Recreation

What is a good way to make someone fall in love with you? By making them a delicious sandwich, of course! Every time I make this sandoozle for someone, I get a hug. Lets be real, bacon and avocado are delicious. I know, I know, it’s just a sandwich, but please let me stress that you should not underestimate the power of this delicious and easy meal. Maybe you’re a fantastic cook, maybe your not. Either way, if you whip this baby up, everyone is going to think you are an angel. From my experience, all boys love sandwiches. They have some weird brain programming that makes them love any sort of food that’s piled between two slices of bread. On the other hand, girls love pretending to be healthy. You get the best of both worlds with this sandy.
