I guess this can’t technically qualify as a quesadilla if it doesn’t have cheese, but we don’t know what else to name it. In place of cheese, we used Nutella and in place of all the other ingredients, we used fruit. To tie it all together, the tortillas are dusted with cinnamon and sugar and baked to give them just the right amount of crispy-crunch. Once again, no beer with this because….tequila. Happy Cinco de Mayo!
2 large, white, flour tortillas
2 tbsp granulated sugar
1 tsp cinnamon
2 tbsp butter
About 1/3 container of Nutella
1/2 of a large banana
1/2 of a mango
1/2 of a large avocado
Turn the oven to broil at 500°. Melt the butter and then brush it onto one side of each tortilla.
Mix up the cinnamon and sugar and sprinkle it on top.
Place the tortillas on the top rack of the oven for about 2 minutes – until they become golden brown. When you take them out of the oven, let them cool for about 5 minutes while you’re working on other things.
Next, chop up all of your fruit into small pieces and mix it all together.
Generously coat the non-sugared sides of the tortillas with Nutella.
Finally, lay the fruit out on one of the tortillas and stack the remaining tortilla on top to create your dessert quesadilla!
