Cinco de Mayo – Part 1 of 3

Welcome to the three part series of recipes that we are posting for Cinco de Mayo. They are all pretty easy and definitely delicious. There will not be a beer pairing because lets be honest, you should all be drinking tequila.

 

Everything Salsa

Why is it called everything salsa? Because it has everything in it and you can put it on everything! You can eat it with chips, throw it on some tacos, or even top of a salad. I’d say this is something you should probably have in your refrigerator at all times.

Ingredients:

2 Avocados

2 Tomatoes (there are 3 in the pictures but we found out that 2 was enough)

1/2 Red onion

2 Red peppers

2 Jalapeños

2 tbsp cilantro

3 Cloves of garlic, pressed

2 Limes

2 tbsp red wine vinegar

Salt to taste

 

Directions:

De-vein and de-seed the red pepper and jalapeños. Chop them, up along with the tomatoes, red onion, and cilantro. In a large bowl, add the chopped ingredients along with the corn, black beans, juice from 2 limes, the garlic, and red wine vinegar. Give it a good mix. Finally, cut up the avocados into chunks and stir that in. You need to add it last so it doesn’t get too mushed up in the mixing process. When you’re finished mixing, you’re ready to eat! We added our salsa to some chicken and goat cheese tacos. What will you use it for?
