Agave Wheat Peach Tart

Drink and Spoon is finally back and we are bringing you tons of good stuff! The first recipe will be this delectable peach tart, with peaches caramelized in Agave Wheat by Breckenridge Brewery. In my opinion, Agave Wheat is the perfect summertime brew. It’s a slightly sweet wheat beer with some overlying citrus flavors – kind of like drinking the sunshine. Using it to caramelize one of my favorite summertime fruits turned out to be a fantastic idea. The wheat flavors really came through and mixed wonderfully with the sweet peaches. I’d pretty much serve this peach tart at any summer picnic and I suggest you do as well.

Ingredients:

 

Crust:

1 & 1/3 cups of all-purpose flour

¼ cup confectioner’s sugar

½ tsp salt

1 stick of unsalted butter

1 cold egg

 

Peach Filling:

5 peaches

½ bottle of Agave Wheat by Breckenridge Brewing

1 stick of unsalted butter

½ cup of sugar

2 tbsp corn starch

 

Directions:

In the food processor, mix together the flour, sugar and salt. Cut the stick of butter into little cubes (about ¼ inch each) and then sprinkle those into the food processor (make sure you keep the butter cold until you’re ready to do this).

Pulse a few times until the dough forms little balls. Whip up the egg and pour it in the food processor, pulsing about 3-4 times until combined. Then, form the dough into one big ball, wrap it in plastic wrap, and refrigerate for about an hour.

Slice the peaches up into medium thickness slices (just check out the pics).

In a deep pan, melt the stick of butter on medium heat. Add the sugar and corn starch and whisk it a bit just to get it all combined. Next, add the peaches and have them dispersed evenly in the pan.

Then, pour about half a bottle of the Agave Wheat over the peaches  (enjoy the other half!)

On medium-high heat, cook for about 10 minutes – the peaches should just start to become soft.

Preheat the oven to 375°. Remove the dough from the refrigerator and roll it out enough so that it fits into a pie dish.

Spray with oil or butter the dish so the tart can be easily removed. Lay the dough into the dish and then fill with the peach mixture.

There may be some extra liquid – you can leave that in the pan. Pop that baby in the oven on the middle rack for about 30 minutes or until the crust starts to become a glorious golden brown. When it looks ready, instagram as many pics as you can to show all your friends how amazing you are and let it cool for about 15 minutes or more before you shovel the goodness into your mouth.
