Bacon. There is nothing better, except maybe a cookie with bacon in it. I don’t have much to say about this recipe other than try it. And try it with the beer. The Imperial Nut Brown by Tommyknocker paired with this recipe is delicious and makes the flavors in the cookie really shine. Enjoy this salty and sweet bacon, walnut, chocolate chip delight.
2 ¼ Cups of Flour (+1 tablespoon for high altitude)
1 tsp baking soda
1 tsp salt
2 sticks (1 cup) butter, softened
1 cup brown sugar
½ cup granulated sugar
1 tsp vanilla
1 ½ cups semi sweet mini chocolate chips
1 cup walnuts
¾ lb bacon
First, preheat the oven to 375 and start cooking your bacon. You want it to be really crispy so that it adds a crunch to the cookies. While it’s simmering away, combine the flour, baking soda, and salt in a medium sized bowl and mix. In a large bowl, combine the sugar and butter. After the sugar and butter are well mixed, add the eggs and the vanilla. Check on your bacon! Don’t let those delicious strips of pig get burnt. Once you’re squared away with that, slowly add the flour mixture to the sugar mixture. Fold in the chocolate chips and the walnuts.
When the bacon is finished cooking, let it cool and then crumble it into small pieces.
Add the bacon bits to the cookie dough when they are ready. These cookies will spread out quite a bit so don’t put too many on the cookie sheet (leave about 3 inches between cookies).
Pop them in the oven for 8-12 minutes, depending on how crispy or gooey you want them to be. When they are finished, let them cool down a bit. We found that these taste best if they are slightly cooled. When they have reached room temp, pour yourself a glass of Imperial Nut Brown and experience cookie/beer heaven.

It was the best choice for the cookies because it contains maple syrup…in the beer. What is better than bacon and maple syrup? Nothing. This brew also includes chocolate malts and nutty flavors, which blend perfectly with the chocolate and walnuts in the cookie. The 9.8% ABV also makes it a great desert beer and will definitely help you to fall asleep and have dreams about this cookie/beer creation.
